Recipe Series: Tinolang Manok (Cebuano Twist)

Hi all! I have been "coerced" by my No. 1 Fan (my beautiful wife) to share the Cebuano version of Tinolang Manok. She really loves it and she thinks it must be enjoyed by all. So here goes! May your attempts be successful and bring so much pleasure to your loved ones.

Ingredients:

1 whole chicken, cut into serving pieces
Small size ginger, crushed and sliced
1 ripe tomato, diced
1 small green papaya, cut into bite sizes
1 small Sayote, cut into bite sizes
3 pieces ripe Saba bananas, cut diagonally
4 tbsp cooking oil
Salt and pepper for seasoning
3-4 cups of chicken broth
Malunggay (Moringa) leaves

Procedure:

1. Heat 2 tbsp of oil in frying pan. Brown the chicken and season with salt and pepper. Set aside.
2. Heat the remaining oil. Saute the garlic and onion. Add ginger and continue to saute for another 2 minutes. Add tomatoes and saute again for another 3 minutes.
3. Add the browned chicken, broth, and allow to boil. Simmer for about 10 minutes.
4. Add Papaya and Sayote, simmer for 15-20 minutes and add the bananas. Simmer for another 7 minutes. Add the Malunggay.
5. Season with salt and pepper.

Serve hot with love! :)
